Cozy Butternut Squash Gnocchi Recipe for Perfect Fall Nights

Soft, pillowy gnocchi made with roasted butternut squash, paired with nutty browned butter and crispy sage for the ultimate autumn comfort food.

  • 1 medium butternut squash, roasted and mashed
  • 1 ½ cups all-purpose flour (or gluten-free flour)
  • 2 egg yolks
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter
  • 68 fresh sage leaves
  • Optional: pinch of nutmeg or cinnamon

Instructions

  1. Preheat oven to 400°F (200°C). Cut the squash in half lengthwise, scoop out seeds, and place cut-side down on a baking sheet. Roast for 40-50 minutes until tender. Cool slightly, then scoop out the flesh.
  2. Blend or mash the roasted squash until smooth. Measure 1 ½ cups of puree for the gnocchi dough.
  3. In a large bowl, combine squash puree, egg yolks, Parmesan, and salt. Gradually add flour until a soft dough forms. It should be slightly sticky but easy to handle.
  4. Divide the dough into small portions and roll into ropes about ¾ inch thick. Cut into bite-sized pieces. Use a fork or gnocchi board to add ridges if desired.
  5. Bring a large pot of salted water to a boil. Drop gnocchi into the water in batches. When they float to the surface, cook for 1-2 minutes more, then remove and drain.
  6. In a skillet, melt butter over medium heat. Add sage leaves and cook until butter is golden and fragrant, and the sage is crispy.
  7. Add cooked gnocchi to the skillet with browned butter. Toss gently to coat, and serve warm with extra Parmesan.
