  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup + 2 tablespoons (130g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder (optional but recommended)
  • 1/2 teaspoon baking powder
  • About 1/2 cup powdered sugar (for piping the football laces)
  • 12 tablespoons milk or water (to thin the icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch (23×23 cm) square baking pan or line it with parchment paper.
  2. Melt the butter in a microwave-safe bowl until fully melted, about 45 seconds to 1 minute. Let it cool slightly but not solidify.
  3. In a large bowl, whisk 2 cups granulated sugar with 3 large eggs until light and frothy, about 2-3 minutes.
  4. Slowly whisk in the melted butter and 2 teaspoons vanilla extract until combined.
  5. Sift together 1 cup + 2 tablespoons all-purpose flour, 3/4 cup unsweetened cocoa powder, 1/2 teaspoon salt, 1/2 teaspoon baking powder, and 1 teaspoon espresso powder in a separate bowl.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula, just until combined. Do not overmix.
  7. Pour the batter evenly into the prepared baking pan and tap gently to remove air bubbles.
  8. Bake for 25-30 minutes. Check at 25 minutes by inserting a toothpick; it should come out with a few moist crumbs but no wet batter.
  9. Remove from oven and let cool completely in the pan on a wire rack for at least an hour.
  10. Use a football-shaped cookie cutter or a knife to cut the brownies into football shapes, trimming corners to create pointed ends if cutting by hand.
  11. Mix about 1/2 cup powdered sugar with 1-2 tablespoons milk or water until thick but pipeable. Fill a piping bag or ziplock bag with a small corner snipped.
  12. Pipe one straight line down the center of each brownie and small perpendicular lines across it to mimic football laces. Let the icing set for about 15 minutes before serving.
