Ingredients

Scale
  • 1 lb boneless skinless chicken breasts or thighs, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth (low sodium preferred)
  • 1 tablespoon olive oil or avocado oil
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup blue cheese dressing
  • 1/4 cup crumbled blue cheese (optional)
  • Chopped fresh chives or parsley for garnish

Instructions

  1. Dice the chicken into bite-sized pieces, chop the onion, and mince the garlic.
  2. Heat 1 tablespoon of olive oil in a large heavy-bottomed pot over medium heat. Add diced onions and cook until translucent, about 4-5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Add the diced chicken to the pot. Season with salt and pepper. Stir frequently until chicken is lightly browned but not fully cooked.
  5. Sprinkle in smoked paprika, cumin, and cayenne pepper. Stir to coat chicken and onions evenly.
  6. Pour in diced tomatoes with juices and chicken broth. Stir to combine.
  7. Bring to a gentle boil, then reduce heat to low and partially cover. Simmer for 30 minutes, stirring occasionally.
  8. Add drained white beans and buffalo wing sauce. Stir gently and simmer uncovered for 5 minutes.
  9. Remove from heat and stir in blue cheese dressing until creamy and silky. Adjust seasoning as needed.
  10. Ladle chili into bowls and garnish with crumbled blue cheese and chopped chives or parsley.

Notes

Use chicken thighs for juicier meat. Adjust spice level by varying buffalo sauce and cayenne pepper. Keep blue cheese dressing chilled until added to maintain creamy texture. If chili is too thick, add chicken broth; if too thin, simmer uncovered longer. Season at the end to avoid over-salting.
