  • 6 tbsp (85g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • ¾ cup (150g) granulated sugar

  • ¼ cup (60ml) sour cream
  • ¼ cup (60ml) heavy cream
  • 2 tbsp (15g) unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring (gel works best)
  • Pinch of salt
  • 1 cup (240ml) heavy whipping cream (optional)
  • 2 tbsp (25g) powdered sugar (optional)
  • 1 tsp vanilla extract (optional)
  • Chocolate shavings or red velvet crumbs for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease your pie dish with nonstick spray.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly moistened. Press the mixture firmly into the bottom and up the sides of the pie dish. Bake for 8-10 minutes, then let cool.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Add sugar and mix until fluffy. Beat in eggs one at a time, ensuring each is fully incorporated.
  4. Mix in sour cream, heavy cream, cocoa powder, vanilla extract, red food coloring, and a pinch of salt. Blend until smooth and vibrant.
  5. Pour the red velvet cheesecake filling into the cooled crust. Smooth the top with a spatula.
  6. Place the pie in the oven and bake for 35-40 minutes, or until the edges are set, and the center has a slight jiggle.
  7. Let the pie cool to room temperature, then refrigerate for at least 4 hours (overnight is best).
  8. Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form (optional). Spread or pipe over the chilled pie. Garnish with chocolate shavings or red velvet crumbs (optional).
