  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) light corn syrup
  • 1/2 cup (115g) unsalted butter, melted
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups (150g) pecan halves
  • 1 9-inch (23cm) unbaked pie crust, homemade or store-bought

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out your pie dough (if homemade) and fit it into your 9-inch pie dish. Crimp the edges if desired and place it in the fridge while you prepare the filling.
  3. In a medium mixing bowl, whisk together the sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth.
  4. Stir in the pecan halves until they are evenly coated.
  5. Pour the filling into the prepared pie crust, spreading the pecans out evenly.
  6. Place the pie on the center rack of your oven and bake for 55-60 minutes, or until the filling is set but still slightly jiggly in the center.
  7. Remove the pie from the oven and let it cool completely on a wire rack. This allows the filling to fully set.

Notes

For the best results, use fresh pecans and consider toasting them lightly before using to enhance their flavor. If the crust edges begin to brown too quickly, cover them with foil or a pie shield during the last 15-20 minutes of baking.
