Ultimate Cherry Amaretto Pie

A rich and indulgent cherry pie with a buttery crust, enhanced by the nutty flavor of amaretto. Perfect for holidays, entertaining, or a special weekend treat.

  • 4 cups fresh sweet cherries, pitted and halved
  • 2 tablespoons amaretto liqueur (or 1 teaspoon almond extract as a substitute)
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cubed
  • 2 pie crusts (homemade or store-bought)
  • 1 egg yolk
  • 1 tablespoon water
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and place a rack in the center.
  2. Pit and halve the cherries, then toss them in a large mixing bowl with sugar, cornstarch, lemon juice, and amaretto. Stir until well-coated and let sit for 15 minutes.
  3. Roll out one pie crust on a lightly floured surface to fit a 9-inch pie dish. Press it gently into the dish and trim any excess dough.
  4. Spoon the cherry mixture into the crust, spreading it evenly. Dot with small cubes of butter.
  5. Roll out the second crust and cut it into strips. Lay the strips over the pie in a lattice pattern, trimming and pinching the edges to seal.
  6. Whisk the egg yolk with water and brush it over the crust. Sprinkle with coarse sugar if desired.
  7. Place the pie on a baking sheet to catch drips and bake for 50-60 minutes, or until the crust is golden and the filling is bubbling.
  8. Let the pie cool completely on a wire rack before slicing. Serve with whipped cream or vanilla ice cream.

Notes

If the crust browns too quickly, cover the edges with foil. For a more complex flavor, use a mix of sweet and tart cherries. Let the pie cool completely before slicing to allow the filling to set.
