  • 1 ½ cups (180g) graham cracker crumbs
  • 6 tbsp (85g) unsalted butter, melted
  • 2 tbsp (25g) granulated sugar
  • ¾ cup (180ml) brewed espresso or strong coffee, cooled
  • 1 cup (240ml) heavy cream
  • ½ cup (100g) granulated sugar
  • 3 large egg yolks
  • 2 tbsp (16g) cornstarch
  • 1 tsp vanilla extract
  • ½ cup (120ml) caramel sauce (store-bought or homemade)
  • Pinch of flaky sea salt (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until evenly coated, then press into your pie pan. Bake for 8-10 minutes, then set aside to cool.
  2. In a saucepan, whisk together coffee, cream, sugar, egg yolks, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 8-10 minutes). Remove from heat and stir in vanilla extract.
  3. Pour the custard into the cooled crust, smoothing the top with an offset spatula. Refrigerate for at least 2 hours, or until set.
  4. Once the custard is firm, spread caramel sauce evenly over the top. Sprinkle flaky sea salt if desired.
  5. Slice, serve, and enjoy the coffee-caramel goodness! Don’t forget a dollop of whipped cream for extra indulgence.

Notes

For best results, use high-quality coffee and allow the custard to cool completely before adding the caramel topping. Homemade caramel sauce can elevate the flavor, but store-bought works well too.
