  • 3 large eggs, at room temperature
  • 1 cup light corn syrup
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Place your pie crust into a 9-inch pie dish and crimp the edges for a decorative touch. Set it aside.
  2. Toast the pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently. Once you smell their nutty aroma, remove them from the heat and let them cool.
  3. In a large mixing bowl, whisk together the eggs, corn syrup, brown sugar, melted butter, vanilla extract, and salt. Whisk until the mixture is smooth and well combined.
  4. Sprinkle the chocolate chips evenly over the bottom of the pie crust, followed by the toasted pecans. Pour the filling mixture over the top, ensuring everything is evenly distributed.
  5. Place the pie dish on a baking sheet and bake for 50-60 minutes, or until the filling is set but still slightly wobbly in the center. (The pie will firm up as it cools.)
  6. Remove the pie from the oven and let it cool completely on a wire rack. This step is crucial for the filling to set properly.
  7. Slice, serve, and enjoy! For an extra treat, add a dollop of whipped cream or a scoop of vanilla ice cream.

Notes

For best results, toast the pecans to enhance their flavor. Let the pie cool completely before slicing to allow the filling to set. If the crust browns too quickly, cover the edges with aluminum foil or a pie shield during baking.
