  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 8 ounces (225g) semi-sweet chocolate, chopped
  • 1 cup (240ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup (200g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, cubed
  • ½ cup (120ml) heavy cream, room temperature
  • 1 teaspoon sea salt
  • Sea salt flakes (optional)
  • Whipped cream (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until evenly combined. Press the mixture into the pie pan, covering the bottom and sides. Bake for 8-10 minutes, then let it cool completely.
  2. Heat the heavy cream in a saucepan until steaming (but not boiling). Pour over the chopped chocolate in a bowl and let sit for 2 minutes. Stir until smooth, then add vanilla extract. Pour the ganache over the cooled crust and refrigerate for 30 minutes to set.
  3. In a heavy-bottomed saucepan, heat sugar over medium heat, stirring constantly until fully melted and amber in color. Add butter, stirring until combined, then slowly pour in the heavy cream. Remove from heat and stir in sea salt. Let the caramel cool for 10 minutes before pouring it over the ganache layer.
  4. Refrigerate the pie for at least 2 hours or until the caramel is firm. This step is crucial for clean slices!
  5. Sprinkle sea salt flakes on top and garnish with whipped cream or chocolate shavings if desired. Serve chilled and enjoy!
