  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup (226g) unsalted butter, chilled and diced
  • ½ cup (120ml) ice-cold water
  • 67 medium apples (about 2 ½ lbs or 1.1kg), peeled, cored, and sliced thin (Granny Smith or Honeycrisp recommended)
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar
  • 2 tbsp (16g) all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tbsp granulated sugar (optional, for sprinkling)

Instructions

  1. Make the dough: In a large bowl, whisk together the flour, salt, and sugar. Add the diced butter and use a pastry cutter or food processor to cut it into the flour until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap in plastic, and chill for at least 1 hour.
  2. Prepare the filling: In a large bowl, toss the sliced apples with sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Let sit for 10 minutes to allow the juices to release.
  3. Roll out the crust: On a lightly floured surface, roll out one dough disc to fit your pie dish. Gently transfer it to the dish, letting the excess hang over the edges.
  4. Fill the pie: Spoon the apple mixture into the crust, mounding slightly in the center. Roll out the second dough disc and place it over the apples. Trim and crimp the edges to seal. Cut slits in the top to allow steam to escape.
  5. Egg wash: Brush the top crust with beaten egg and sprinkle with sugar for a golden finish.
  6. Bake: Preheat your oven to 375°F (190°C). Bake the pie for 50–60 minutes, or until the crust is golden brown and the filling is bubbling.
  7. Cool: Allow the pie to cool on a rack for at least 2 hours before slicing. This helps the filling set.

Notes

For a sweeter pie, add more brown sugar. Use a pie shield or foil to prevent the crust edges from over-browning. Sprinkle breadcrumbs or flour on the bottom crust to avoid sogginess.
