Ingredients

  • Dark Chocolate (70% cacao)
  • Milk Chocolate
  • White Chocolate
  • Heavy Cream
  • Egg Yolks
  • Granulated Sugar
  • Vanilla Extract

Instructions

  1. Melt the Dark Chocolate Layer: In a heatproof bowl, melt the dark chocolate and 1 tablespoon of butter over a double boiler. Once melted, let it cool slightly. In the meantime, whip 1/2 cup of heavy cream until soft peaks form. Gently fold the whipped cream into the melted chocolate until combined. Spoon this mixture into the bottom of your serving glasses and refrigerate for 20 minutes.
  2. Prepare the Milk Chocolate Layer: Repeat the same process with the milk chocolate: melt with butter, cool slightly, whip the cream, and fold together. Carefully spoon this layer over the dark chocolate layer, smoothing it out with a spoon. Refrigerate for another 20 minutes.
  3. Create the White Chocolate Layer: For the final layer, melt the white chocolate with butter and let it cool. Whip another 1/2 cup of heavy cream and fold it into the white chocolate. Spoon this final layer on top of the milk chocolate layer and refrigerate for at least 1 hour (or until fully set).
  4. Add Toppings: Before serving, garnish each mousse cup with whipped cream, chocolate shavings, or fresh berries for a pop of color and flavor.
