  • 1 sheet of store-bought puff pastry, thawed
  • 2 medium-sized apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon unsalted butter
  • 1 large egg, beaten
  • 1 tablespoon flour for dusting

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat the butter in a small frying pan over medium heat. Add the diced apples, brown sugar, granulated sugar, cinnamon, and nutmeg. Cook for 5-7 minutes, stirring occasionally, until the apples soften and the mixture thickens slightly. Let it cool for a few minutes.
  3. Lightly flour your work surface and roll out the thawed puff pastry into a rectangle, roughly 12×10 inches.
  4. Using a sharp knife or pizza cutter, cut the puff pastry into 12 equal squares. Place about a teaspoon of the apple filling in the center of each square.
  5. Fold each square over to form a triangle. Use a fork to crimp the edges and seal them tightly.
  6. Beat the egg and brush it lightly over the tops of each mini pie to give them a golden, glossy finish.
  7. Place the pies on the prepared baking sheet and bake for 15-18 minutes, or until puffed and golden brown.
  8. Let the bites cool on a wire rack for 5 minutes before serving. Enjoy warm or at room temperature!

Notes

Work quickly with the puff pastry to keep it cold, and avoid overfilling the squares to prevent bursting during baking. Prepare the filling up to two days in advance for convenience.
