  • 1 tbsp (15 g) sugar
  • Pinch of salt
  • 1 cup (240 ml) Greek honey (preferably floral or citrus varieties)
  • 3/4 cup (180 g) ricotta cheese or Greek yogurt
  • 3 large eggs
  • 2 tbsp (30 ml) fresh lemon juice
  • Zest of 1 lemon (or orange for variation)
  • 1/4 cup (60 ml) milk
  • 1 tsp (5 ml) vanilla extract

Instructions

  1. Prepare the crust: In a large mixing bowl, combine flour, sugar, and salt. Add the cold butter cubes and use a pastry blender to cut the butter into the flour until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. Roll out the crust: Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a circle large enough to fit your pie dish. Carefully transfer the crust to the dish, pressing it down gently. Trim any excess and crimp the edges for a rustic look. Prick the bottom with a fork to prevent bubbling.
  3. Pre-bake the crust: Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, then remove the weights and bake for another 5 minutes. Set aside to cool slightly.
  4. Make the filling: In a medium bowl, whisk together the honey, ricotta cheese, eggs, lemon juice, zest, milk, and vanilla extract until smooth and creamy.
  5. Assemble the pie: Pour the filling into the pre-baked crust, spreading it evenly. Place the pie in the oven and bake for 35-40 minutes, or until the filling is set and slightly golden on top.
  6. Cool and serve: Remove the pie from the oven and let it cool completely on a wire rack. Serve at room temperature or chilled, garnished with a drizzle of honey and extra citrus zest.
