  • 2 tbsp unsalted butter
  • 2 tsp vanilla extract
  • Whipped cream (optional)

Instructions

  1. Prepare the pâte à choux crust: In a medium saucepan, heat the water and butter over medium heat until the butter melts and the mixture begins to simmer. Add the flour and salt, stirring vigorously until the dough comes together and forms a ball. Remove from heat and let cool for 5 minutes.
  2. Beat in the eggs one at a time, stirring quickly to avoid scrambling. The dough should be smooth and shiny.
  3. Spread the pâte à choux dough evenly into a greased 9-inch pie dish, pressing it up the sides to form the crust. Bake at 400°F (200°C) for 25-30 minutes, or until golden brown. Cool completely.
  4. Make the vanilla cream filling: Heat the milk in a saucepan over medium heat until steaming but not boiling. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks. Gradually pour the hot milk into the egg mixture, whisking constantly.
  5. Return the mixture to the saucepan and cook over medium heat, stirring frequently, until thickened (about 5-7 minutes). Remove from heat and stir in the butter and vanilla extract. Cool to room temperature, then refrigerate for at least 1 hour.
  6. Assemble the pie: Once the crust and filling are cooled, spread the vanilla cream filling evenly into the crust. Top with whipped cream, chocolate drizzle, or powdered sugar as desired.

Notes

Ensure the crust is completely cooled before adding the filling to prevent sogginess. Experiment with toppings like fresh berries or caramel sauce for added flavor.
