Classic Apple Pie Recipe Easy Homemade and Perfectly Spiced

A comforting, perfectly spiced apple pie with a flaky, buttery crust that’s ideal for holidays or any occasion.

  • 2 ½ cups all-purpose flour (plus extra for rolling)
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tbsp sugar
  • 68 tbsp ice water
  • 67 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • ¾ cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • 1 tbsp lemon juice
  • 1 tbsp unsalted butter, cut into small pieces
  • 1 egg, beaten
  • 1 tbsp milk

Instructions

  1. In a large mixing bowl, combine flour, salt, and sugar. Add the cubed butter and use a pastry cutter (or forks) to blend until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  2. In a large bowl, toss sliced apples with sugar, flour, cinnamon, nutmeg, cloves, and lemon juice. Let it sit for 10-15 minutes to allow the flavors to meld.
  3. On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Gently transfer to a 9-inch pie dish, pressing it into the edges.
  4. Pour the apple mixture into the crust, spreading it evenly. Dot with butter pieces.
  5. Roll out the second disc of dough and place it over the apples. Trim the edges, seal by crimping, and cut slits in the top for ventilation.
  6. Mix the beaten egg with milk and brush over the top crust. Bake at 375°F (190°C) for 50-60 minutes, or until the crust is golden and the filling is bubbling.
  7. Let the pie cool on a wire rack for at least 2 hours before slicing. Serve warm or at room temperature.

Notes

Keep the butter cold for a flaky crust. Let the pie cool completely before slicing to allow the filling to set.
